Assuming your husband stays in the same line of work and does not have an extensive job gap then you should be fine. Normally lenders like 2 pay stubs in order to do the loan but there are lenders out there who accept just one. Are you planning on selling your home in NY first? If not then that mortgage payment would have to be counted against you as well which will affect the loan amount you would qualify for.
