Yes, you can change your mind. If the offer hasn't been accepted by the Seller simply rescind your offer. If it has been accepted and you are still in the "due diligence period" to do your inspections you can terminate the contract for any reason. If you are past the due diligence period you can still terminate the contract, however, you will most likely lose your earnest money.
Don't worry about being rushed....go ahead and get all the necessary documentation to your lender so they can go ahead and get started on your paperwork....then when you decide on a house you can do your inspections and the lender can order the appraisal and you should be in your new home within 2-3 weeks.
