In my personal opinion (and only my opinion), I prefer Irving. As Bruce said, you need to look at several amenities of each area including the schools (even if you don't have children). Do a little homework and compare the tax base, average home price, etc. While you can improve an individual home, you can not control the values of your neighborhood - and that is what largely determines your home's value.
Good question but difficult for us to answer. Typically many people look at school systems, distance from work, distance from amenities they enjoy, style of homes, etc. What may make sense for one person, may not make sense for the next person. The cities do share a common border, but they are both fairly large geographically. For example if you live in Valley Ranch the north part of Irving and work in Mansfield it could take you 45mins to 1hr at peak times to drive. If you live in South GP, it might take you 10mins. I'd be glad to help you work through the decision if you need help and don't have a realtor already.
They are different cities, I think you get more for your money in Grand Prairie in terms of newer homes, lot size. In irving, particularly north Irving, the Las Colinas and Valley Ranch areas is becoming the HUB for new condos and townhomes.
Irving would be an easier commute to the airport if you travel for work a lot, but GP is also convenient if you work in Dallas or Fort Worth.
Let me know if I can assist you further.
