It is normal to insure replacement value of the house and any other improvements. You may also insure the contents of the home - this will vary, you may have just normal furnishings or you may have antiques and many jewels and art that are appraised at a high value. Appraised is the key word here .
As far as the land goes, unless you need flood insurance, and this is really for your structure, the land is holding the world together ( I don't know about part of the hill sides in Ca.) and you are not insuring the land.
