I am hesitant to say too much regarding another contractor however you as a consumer have the right to have your questions answered fully, have all items in writing, and to mediate any disputes in a civil manner and per the terms of your contract.
If they are members of the NH Home Builders and Remodelers Associaiton they agree to "fair dealings" in the code of ethics.

Thanks for the great answers! To answer some of your questions:

1 - total sqr footing = 315 sq ft
2 - contractor claims to only be factoring in $1 per sqrt ft for tile!!!
3 - independant contractors have quoted on average $10 materials included for the installation.
4 - general contractor tonight threatened to stop his crews from working until we stopped complaining about the delays, the questionable pricing structure, the lack of written statements and until he received more $$$.

Hi Lan- Good answer below, and it also depends on the layout (diagonal, etc.), accent tiles or not? Size of tiles, borders, etc. If what you are doing is quite intricate, I guess it could be $18...
You should ask the remodeler to show you his backup on how he arrived at the $18/ sf. Keep in mind it is his business to add 25% or so to his costs for his overhead and profit.

Hi Lan

Average cost contractors pay for labor is $4 to $6 per square foor depending on what type of backer system you are using, add $1 to $2 for backer system material and mastic, and add 25% for contractors markup (profit, overhead, taxes, and insurance) so you should be paying in the area of $6 to $10 again depending on system (some are more labor to install)
