The funds we received from the sale of our home
will be the equivalent of a
401K for us - we have no pensions
or company 401K accounts
and we do not want to dig into
the principal from the sale
of our home. Know where I
can get what i'm looking for

Shop around by checking as many banks as possible and go with the product you are most comfortable with.
FIRST ANSWER
Go to your time machine and travel backwards two years and you will see 5%! You'd be lucky to get 2.0%.
