The great thing about have an open house on a holiday weekend is that buyers have the time off.
You should know that the buyers see the home they purchase with a Realtor 90% of the time. That means that to sell a home Realtors need to be showing it. The rule of thumb is that in the first two weeks we expect 10-12 showings. With buyers being off on the weekend, having your listing available for showing is very important.
On average 10-12 showings will yield one offer, so if we don't see that showing activity, then a price adjustment is in order. OPen houses don't sell houses, Realtors sell houses.

You really never know with holiday weekends. I've had record showings on holidays like July 4th and Labor Day some years and not a soul on other years. Same thing with perfect weather and bad weather. Like Terry says the people who typically show up are the more serious buyers. Also I've had families where the kids wanted to buy and were waiting for the parents to come on a holiday weekend to help them look. Good luck we hope you sell it this weekend.

The real estate market is very regional and thus the answer to you question is a well. In our location, this is an active weekend for open houses.
On the other hand, one week later we see a serious decline that we feel is directly related to the opening of the NFL football season.
On the other hand, if your community is having a big function, garage sale weekend, parade, town fair, art show that will draw visitors from other areas, this may be a good reason to hold an open house regardless of what else is going on.

Usually it's pretty slow because people are out there taking advantage of the last "hurrah" of summer. However, those looking are typically pretty serious buyers.

Buyers normally during the long weekend prefer to enjoy the holiday than search for properties. We normally dont hold open houses during these times.

You just never know. Last year labor day weekend, I sold 2 homes... the year before that it was very quiet. I have a couple of appointments this weekend to show homes in Plano and Richardson. The appointment service will be closed on Monday so don't expect a call from them and if any agents have appointments, they'll set them up in advance.
Since schools started this week, things are tempering. I agree with Maria, if anyone is out looking, they are serious, so don't turn down any showings.

What I've noticed about any holiday weekend is that there are fewer lookers but those out looking are usually serious buyers.
I'm not sure how things are out in Plano however, in our neck of the woods it's generally pretty dead on Monday but the Sat and Sun following are busy. I think this year will definitely be better than last.
