It depends on market, community, location. You can test try determine which days and times provide you better results.

I am just going to add a thought for you...
The other agents all are right, Sunday afternoons usually in most cities, but in some they also do often Saturday afternoons, I do sometimes both on one weekend, in case someone would like to see the open house, but has another event to attend...

the other idea for you, what I often do, I check if and when surrounding properties to my listing are holding an open house, that way, people will drive into the area for one property and may just see yours as well... It just depends how much activity is in your listing's area...

Hopefully these are some additional hints for you!
And make sure it is advertised on the sale sign if there is drive by traffic....

Because of buyer availability, many people feel the Sunday afternoon is the best day of the week to host an open house. We also feel certain holidays present a favorable opportunity as well...Labor Day, Memorial Day, the Fourth of July.

Sunday is the traditional day, and it's also the day the consumer expects to find open houses.
