Why are the homes in Spring (77068) priced so low? These homes are expansive and have great bones. Is it just because of the school district (Spring)?

Primarily schools. Spring ISD doesn't have nearly the reputation as Klein. There is also a higher rate of distressed properties in 77068 (vs 77379 for example)

There are many reasons and they don't always relate to the schools. Older VS Newer, bigger VS smaller, community with many amenities VS a no-name street in an unrestricted area and commerical all around.

There could be crime issues. Maybe the homes your looking at are in a flood zone. New construction competition near by. There are too many possibilities to list here, but it is safe to say you have not spoken to a Realtor.

Have a private meeting with a Realtor and look at the homes your questioning. He/she can help you determine if the homes are truely priced low, or just lower than what you are used to seeing in another location.
