Crested Butte meets your "Colorado" criteria and is an absolute bargain right now. (We are 300 feet higher however at 8850). After a stratospheric rise in values and buyer demand from 2005-2008 we are now experiencing a serious buyer's market condition: declining prices and rising inventory. We don't have too many foreclosures/short sale opportunities but we do have sellers ready to deal on condos, town homes, land and single family homes.
Have you considered the Upper Arkansas River Valley? Our towns of Salia and Buena Vista are below 8,500 feet, have gold medal trout fishing in the Arkansas River, Monarch and Breckenridge ski areas are nearby and we have two golf courses and more being planned. Our newly built Heart of the Rockies Medical Center is a state of the art facility with several branch offices for local care. The homes here are very reasonable and many have acreage, tall ponderosas and incredible views of the Continental Divide with several 14K ft mountains which provide the western wall of our valley. Because of the high mountains to the west, our winters are much milder and we receive less snow than most places in Colorado, but if you like snow, just drive a few miles up to the western passes and play or snowmobile all you'd like. 72% of Chaffee County is designated BLM, National Forest or State owned land, so the possibilities for wilderness activities are unlimited. We are only 2 hours from Colorado Springs, 2.5 from Denver, 45 minutes from Aspen, 90 minutes from Breckenridge. Check out our valley at http://www.fourteenernet.com. These agents failed to mention Gunnison County: Crested Butte/Mt. Crested Butte, CB South, Almont, or Gunnison, Colorado! I think you would find these areas will exceed all expectations! The views alone far surpass almost anywhere else in Colorado.
Delta County, Montrose County, Mesa County, Garfield County. Many people use the Montrose airport to access Telluride. You have many options in our beutiful state. It may be helpful to visit some areas and get a "feel" for each enviroment. Also check out the chamber of commerce for each area. They can be a great source for information on the activities you are interested in. I know the Grand Junction Chamber has all of the info on hunting/fishing outdoors and the other ammenaties you mentioned.
Evergreen and the surrounding areas would also meet your needs. Upper Bear Creek boasts phenomenal trout fishing and just a short drive away is the Platte with award winning fishing available. The Evergreen Golf Course sits right next to Evergreen Lake (fed by Upper Bear Creek), and there are also two country clubs - Hiwan and Mount Vernon nearby. Plus an endless variety of other courses within an easy drive. Evergreen homes are typically 45 minutes to 1-1/2 hours to the airport depending on location of the home. Evergreen has a small ski resort called Echo Mountain (http://www.echomtnpark.com/), but also offers a 50 minute to 1/1/2 hour commute to the Summit County resorts. There are many open spaces around and properties that border open space, BLM or state land. My husband is a hunter, and he sometimes will hunt with a private land permit and other times will pull permits for surrounding areas. He is often (but not always) successful.
Elevation in Evergreen and surrounding areas varies from 7000' feet on up.

Hi there. Well, you've just described Silverthorne, CO and several other places in Summit County, CO. There are quite a few nice properties in Silverthorne, near a world class golf course (The Raven at Three Peaks -- with several other nice courses in the county), near Gold Medal trout fishing along the Blue River, near elk and deer hunting. Less than 2 hours from Denver International Airport. Very close to world class skiing (Breckenridge, Keystone, Copper Mountain, Arapahoe Basin -- with Vail only 35 minutes away. Year round access -- no problem. 80% of Summit County is BLM or National Forest, so that's no problem either. We have a beautiful new hospital as well. If you can go up just a tad in elevation it sounds perfect for you (Silverthorne is at 8,700 ft). If you like, you can easily search the Summit County MLS on my website.
