Most escrows actually "Don't " close on time...there are too many variables.Lending is certainly different now VS even 2-3 years ago...Don't sweat not closing on the day that you are supposed to....not many do....have your agent ask for an extension if you think you might not make it.

It used to mean that a 30 day escrow pretty much guaranteed that you would get it done in 30....now the average is probably closer to 35-40 with the appraisal taking longer and the lender's taking longer.

FIRST ANSWER

Depends on the bank. Have you discussed this with your agent if you are using one and have they notified the seller, in this case the bank. Im sure they would honor an extension of 2-3 days if you needed one.
