Could an unmarried couple form an LLC & just split the stock if they ever parted?

In Md, investors would buy property in an LLC and then sell the LLC to avoid paying the Transfer and Recordation Taxes. This is no longer a tax avoiding strategy but it was for years.

The LLC doesn't have to have "stock"-- they can just be bought out, right?

Contact an attorney to get the answer. I believe the answer is yes. Consult legal counsel.
