There is a Ryland Overton (3000 sq ft) just around the corner from me. 4 br, 2.5 baths, game room, for just over $200,000. There are many fantastic deals like that in Pflugerville. (512) 731-8316.
I have lived in Pflugerville for the last 22 years & have seen it grow....in a good way. Great schools, churches, family values, homeowner pride shows in well-maintained homes & now more shopping to diversify the tax base. Most of the neighborhoods are linked with hike & bike trails, too.
In fact, when we wanted to "move up" 2 years ago, we opted to stay in Pflugerville rather than move to another community since we love living here. It is now especially accessible to Austin Bergstrom airport via the toll roads, & many other areas like Austin, the lakes & Georgetown are equally accessible.
Please check out the home we are selling @ 1217 Canyon Maple. A job transfer takes us out of state & we are sad to leave this area & our lovely 2 year old Standard Pacific custom built home. Our agent is Susan Skains w/ Coldwell Banker & she is very knowledgeable & experienced with the area. We have been here long enough to add the 500 square foot covered patio, sprinkler system, plantation shutters, & many other lovely additions. The study could easily become a fourth bedroom & the house has a great "flow". It looks like a 2 car garage but it is a 3 car because it is a tandem garage. Crown molding, granite countertops & lots of other upgrades add value. The radiant barrier in the attic keeps the utility bills extra low. It is rock on 3 sides & the 4th side is hardiplank & there are gutters all around.

Pflugerville is a buyer's market. Quite a few homes are coming up and showing as available (62 in my search). Also, please keep in mind, part of Pflugerville is regarded as rural. Even though the home you would like is in a subdivision, if it is in Williamson County you may qualify for 100% financing through the USDA. In today's ecomony I am recommending to all my clients to keep as much of their own personal money as possible. Call me and let me negociate the best deal for you.

As Josh said there are a lot of opportunities in Pflugerville to find the square footage you want and are under your $250,000 price range. There are both new and resale properties available for that price range, do you have a preference?
Check out this site if you already have a specific zip code in mind, 78660 covers most of Pflugerville, http://www.tnpmarket.com. It will provide you with information about homes for sale, sold properties and area amenities for that zip code. Round Rock is not too far away from Pflugerville with the new 45 toll road, and that area is also well established. Another possible option for you.

Congratulations on the possible move, I think you'll find the Austin area to be a great place to live and work. There are over 100 homes in the Pflugerville area that are under $250,000 and above the 2500 sq ft size and at least 4 bedrooms.
