Hello and welcome to the Scoop

We are excited to announce we have changed our team name back to our orignal name that we had used for 20 plus years. Kay Baker Associates. We will miss our partner of two years, Lisa, as she returns to her own team.  Our team has been together for over 20 years, and will continue to nurture and grow the business that Kay and Billy started.  We honor Kay’s memory, in everything we do.  Thank you

"CHEESY" BAKED QUINOA CAKES WITH ROASTED BROCCOLI

1 13.4-ounce) package no-salt-added kidney beans, drained and rinsed
    2 cups cooked quinoa*
    1/4 teaspoon grated nutmeg
    Pinch cayenne pepper
3 ounces Kite Hill Cassucio plant-based cheese, diced
    4 cups broccoli florets
    2 cloves garlic, minced

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

In a large bowl, mash beans with a potato masher or fork until fairly smooth. Add cooked quinoa, nutmeg and cayenne, and stir until evenly blended. Fold in diced cheese. Form mixture into 8 patties. Place on the prepared baking sheet.

In a medium bowl, toss together broccoli with garlic. Place on a separate baking sheet.

Roast quinoa patties and broccoli about 30 minutes or until patties are crisp and heated through, and broccoli is fork-tender, stirring broccoli halfway through cooking.

*Use precooked frozen quinoa or cook from scratch by rinsing 1/2 cup quinoa in a fine sieve until water runs clear, drain and transfer to a small pot. Add 1 cup water and bring to a boil. Cover, reduce heat to medium low and simmer until water is absorbed, 15 to 20 minutes. Set aside off the heat for 5 minutes; uncover and fluff with a fork.

    Greek Oven Roasted Delicious Potatoes

8 large potatoes, peeled, cut into large wedges (about 6-7 wedges per potato)
4 garlic cloves, minced (more garlic is a good thing, less garlic is a no-no for this recipe)
    1/2 cup olive oil
    1 cup water
1 tablespoon dried oregano (get the Mediterranean, it's the best!)
    1 lemon, juiced
    sea salt
    fresh coarse ground black pepper

    1
Preheat oven to 420°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!
    2
Put all the ingredients into a baking pan large enough to hold them.
    3
Season generously with sea salt and black pepper.
    4
Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
    5
The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
    6
    Bake for 40 minutes.
    7
When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
    8
Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
    9
This will take about another 40 minutes.
    10
Do not be afraid of overcooking the potatoes- they will be delicious.
    11
Note: I often melt a bouillon cube in the water; if you do, make sure to cut back some on the salt.

Here Are Some Smart Moves for Buying a Home in Today's Market

When the best homes are selling like they do in today's market, you might try one or more of the following ways to beat the competition before another buyer gets your dream home:

    • Bid realistically (near listing price) instead of hoping your seller will cave in to a low offer.
    • Make your offer without strings (sale of previous home, home inspection, etc.) but only if you're certain your old home will sell on time or the property is in move-in condition.
    • Be flexible (within reason) to a seller's conditions concerning conveyable property, dates of closing and occupancy. Giving in a little may gain you a lot.
We can help you find the best home for you in your price range, and we can start as soon as you're ready. E-mail us with details of your dream home now.
    More Tips

We have extensive knowledge and experience we'd be happy to share with you. For example, take a look at our FREE report, SETTLEMENT: Secrets To An Easy Contract Closing. You can read it right away by clicking the link. Give us a call or send us an e-mail for more valuable tips!

  • Eight Money-Savers Every First-Time Home Buyer Should Know

Posted Under: Home Buying in Wilmington, In My Neighborhood in Wilmington, Investment Properties in Wilmington  |  July 1, 2014 10:30 AM  |  119 views  |  No comments
www.WilmingtonNC-realesate.com for all your real estate needs.  Sign up for instant notificaton of new listings when the come on the market.

Buying a home may be the biggest purchase of your life. However, the costs are minimized when you realize how home buying actually puts cash in your pocket. Here are just a few ways to save:Thinking about buying a house
    1. Stop paying rent. Come out ahead at tax time by deducting for property taxes and mortgage interest while building equity savings.
    2. Buy now. Prices aren’t standing still; save now, compared to tomorrow’s higher prices. The interest rates are still great.
    3. Choose a good neighborhood or one on the upswing.
    4. Buy a home that is likely to appreciate in value, and watch your "savings" increase.
    5. Cut back on down payment requirements with an FHA or VA loan, if you qualify. Or take out private mortgage insurance, and save on out-of-pocket costs.
    6. Deduct closing costs (property tax, "points," etc.) Be sure to consult your professional tax advisor before filing any claims.
    7. Deduct moving expenses allowed if your move is job-related, saving your tax dollars.
    8. Pay off the loan principal regularly or in installments over the life of your loan, thus saving thousands in interest payments.
These are just some of the ways your home purchase saves you cash. One of your best cost-saving moves – in either buying or selling – is to take advantage of our professional real estate services. We know the area, the financial establishment and the real estate market. We can help you make your best and least costly move. We’ll welcome your call or e-mail. bakerwayneassociates@ec.rr.com
